植物衰老是指细胞、器官或整个植株生理功能衰退，最终自然死亡的过程。是植物生长发育中重要的一环，是生命科学领域研究的核心问题之一。衰老是一个高度有序的调控过程，其中牵涉到众多生理生化反应，这些反应既可以导致植物的衰老，又可以通过这些反应检测出植物的生理状态。植物衰老时会出现蛋白质下降、核酸含量变化、光合速率下降、呼吸速率下降等生理生化变化。植物的衰老与自生基因和外界环境中光、温度、水分、营养等因素的影响有关。其调控机制公认的主要有自由基理论和细胞的程序死亡理论。
叶片衰老的分子机制可分为起始、衰退和终末三个阶段来研究。起始时期细胞的代谢发生变化，光合作用活性开始下降，衰老的信号传递链开始运行；衰退时期，细胞组分、大分子物质被降解；终末时期则是以细胞死亡诱导因子的积累、细胞完整性的破坏为特征，叶片脱落死亡。
关于植物衰老的研究，不仅具有理论上的重大意义，有助于认识植物的发育过程, 而且可能建立操纵植物衰老的方法，在农业生产以及园林花卉、城市绿化、分子育种等众多实用方面具有潜在的价值。
