一资料书上说He is a friend of your father's.他是你父亲的一个朋友(强调你父亲的朋友不止一个).
He is a friend of your father.他是你父亲的朋友(表示强调他对你父亲的友好).
另一资料书上说He is my old friend of my father.的写法是错误的.应该为He is my old friend of my father's.
到底哪个是对的?

都可以的，当然，双重所有格用得更多些。我觉得第一本资料书说得很对。
a picture of my father 一张画着我父亲的画像（父亲的肖像画）
a picture of my father's 一张我父亲的画像（父亲众多画像中的一张）
