不正确，应该是 I have fewer apples than him, right? 用 do I? 收尾有点怪怪的，语意不流畅。

这里 HAVE是实意动词 而FEWER 带否定的意思
所以结尾用DO I 是正确的。
但原句不能用than he。可以改为than him / than he does/ than he has /
