摘要:本文以酥梨为实验原料,研究了经过超低氧的前期处理的酥梨中乙醇的含量变化对其采后贮藏品质的影响。实验结果表明:与冷藏对照相比,超低氧前期处理(5~7天)抑制了酥梨的呼吸强度,促使乙醇含量发生变化,呼吸作用减弱,酥梨本身的营养物质消耗减少,同样,前期超低氧处理不会对酥梨果实的风味产生影响,对酥梨外观的保持也有很明显的效果。
