摘要:牛蒡(Arctium lappa L.)为菊科二年生草本直根类植物。又名鼠黏草、蒡翁菜、牛鞭菜等。牛蒡营养丰富,富含菊糖、纤维素、蛋白质、钙、磷、铁等矿物质和多种维生素,而且具有很强的保健功能,果实、根、茎叶均可食用。本实验主要是研究不同的互色方法对牛蒡感官的影响,利用分光光度计测定不同烘干温度下牛蒡菊糖和胡萝卜素的含量。利用原子吸收法测定Fe,Zn元素的含量。为佐餐料饱的加工提供依据。
