这个those。。在句中做什么成份。。knowledge之后应该是定语从句

做定语，that的复数，是those最普通的用法，
它不是先行词
knowledge是先行词，这儿省略了关系代词which或that，因为关系代词在从句中做宾语

如果不省略的话：

They have not gained the knowledge that/which those fairly good jobs or positions require.
