975X Express has the advantage of being about 10 months old (released November, 2005, approximately). It supports peer-to-peer PCI Express writes and thus ATI's Crossfire. The ICH paired with it, ICH7, supports a native PATA IDE channel.

P965 Express's biggest "advantages" over 975X is that it officially supports DDR2-800 and it winds up in sub-$200 boards. That's it. It doesn't support peer-to-peer writes, so no Crossfire support. Its ICH, ICH8, has no native PATA support so you'll need to use a third-party IDE controller for virtually any optical drive you want to connect.

For a performance system that will support Crossfire, 975X is the only good choice at the moment. This may change once ATI's RD600 chipset arrives, but that's not for another month or so. P965 is good for mainstream systems where more than one video card isn't expected.
