【目的】结合目前大众对糕点产品的消费趋向,在普通蛋糕的制作工艺上添加具有保健功效的番茄和蜂蜜,制作物美价廉可满足市场需求的蛋糕。【方法】参考一般蛋糕的制作工艺并结合前人对保健蛋糕的研究成果,筛选出影响此次制作蛋糕感官品质具有代表性的三个因素——番茄、蜂蜜和泡打粉。对三个因素进行单因素试验可确定此三因素的零水平,然后利用DPS数据处理软件进行二次通用旋转试验设计并进行分析,根据成品的感官评定确定番茄蜂蜜蛋糕的最佳工艺配方。【结果】番茄蜂蜜蛋糕的最佳配方:低筋粉120g、鸡蛋120g、番茄60g、蜂蜜40g、泡打粉4g、白砂糖35g、调和油80g、蛋糕油6g以及奶粉30g。【结论】本试验为丰富番茄的深加工提供了一条捷径,同时为番茄蜂蜜蛋糕生产提供了科学的理论和实践依据。
