广东汕头地处中国亚热带的东南沿海,但一到冬天,这里却几乎成为“火锅之城”。而今汕头的火锅种类五花八门,传统的“潮汕海鲜火锅”、新兴的“野生菌火锅”、“三味火锅”、“泰式火锅”等辣的、麻的、酸的、清淡的、滋补的火锅一应俱全。

记者在汕头市区转了一圈,只见许多火锅店都相邻而居,在汕头广厦新城两百米见方内就有三家火锅店相对而开,生意都很红火。虽然细雨蒙蒙,记者走进店里依然看到,店内座无虚席,热气飘拂,香味诱人,一桌桌的顾客围着大火锅,吃得津津有味。店老板陈先生告诉记者:

“近几年来,北京涮羊肉、海南东山嫩羊等外来羊肉火锅各自迎合汕头人的不同口味,在汕头深受青睐。”

的确,天冷,吃火锅可以暖暖身子,而且火锅有补气滋阴、暖中补虚的作用。因此,每年的冬天,很多潮汕人都喜欢带一家人出来吃。

与其他火锅相比,菌类火锅具有低脂肪、高蛋白质、不肥不腻的特点,而且菌类久煮不烂,食后齿颊留香,口感清爽柔滑,据说对美容也十分有益。每当夜幕降临,各野菌火锅店便门庭若市,其中青年人居多。据了解,一般菌类火锅的人均消费在二三十元人民币之间,价位也适中。

该店店主告诉记者,近几天天气比较冷,火锅生意不错。春节期间生意就更红火,日均有几十桌客人,而三十晚上来店里围炉的家庭是一拨又一拨,目前该店正准备进一批新鲜野生菌。

在曾经潮汕自成一体的饮食风格中,中国各地乃至世界各地的火锅风味能在此落地生根,这与当地经济的发展,对外交流的增多,民众生活的改善不无关系。
